Ingredients

4 servings
  • 1 ½ pounds ground beef80/20 chuck, cold
  • 2 teaspoons kosher salt
  • 1 teaspoon coarsely ground black pepper
  • 8 slices American cheese
  • 4 each potato bunssplit
  • 3 tablespoons unsalted buttersoftened
  • ½ each white onionshaved paper thin
  • 8 slices dill pickle chips
  • cup burger saucemayo, ketchup, minced pickle, a little pickle brine

Method

Tips

Fat and cold are non-negotiable. 80/20 chuck straight from the fridge. Leaner beef dries out at this thickness, and warm beef smears rather than spreading.

Salt on the griddle, not in the bowl. Salting the ground beef ahead dissolves proteins and gives you a springy, sausage-like texture.

Two per bun beats one thick patty. Twice the crust, and the cheese in the middle glues the stack together.

Variations

  • Oklahoma onion burger: Pile a fistful of paper-thin onion on the ball before smashing so it presses into the meat and fries in the beef fat.
  • Green chile: Top each patty with roasted, peeled Hatch chiles under the cheese.
  • Patty melt: Skip the bun, use buttered rye and Swiss, and griddle the whole thing like a grilled cheese.
