Ingredients

  • 4 pounds chickencut into 8 pieces, breasts halved crosswise
  • 3 cups buttermilk
  • 3 tablespoons kosher saltdivided
  • 1 tablespoon hot sauce
  • 3 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 tablespoon sweet paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons coarsely ground black pepper
  • 1 teaspoon cayenne pepper
  • 8 cups peanut oilor other neutral high-smoke-point oil

Method

Tips

Brine long, dry briefly. Eight hours is the minimum for the salt to reach the middle of a thigh. Twenty-four is better. Past that, the acid starts to make the surface mushy.

Hold 300 to 325°F, not 350°F. 350°F is the starting temperature; the chicken pulls it down, and that lower range is where a bone-in piece cooks through before its crust goes too dark.

Two racks, always. One for the coated raw chicken to rest on, one for the fried chicken to drain on. Coated chicken that sits in a puddle fries unevenly.

Variations

  • Nashville hot: Whisk 1/2 cup of the frying oil with 2 tablespoons cayenne, 1 tablespoon brown sugar, 1 teaspoon garlic powder and a pinch of salt. Brush over the hot chicken and serve on white bread with pickles.
  • Honey butter: Melt 4 tablespoons butter with 3 tablespoons honey and a pinch of flaky salt; drizzle at the table.
  • Boneless tenders: Same brine and dredge, but fry at 350°F for 4 to 5 minutes total.
